New Kitchen - are glass splashbacks 'in'?

Hiya!

We are in the process of installing a new kitchen (yippee). We have gone for cream gloss handle-less units and solid oak worktops. Now, I've already read somewhere that apparently this look is now 'dated' but my kitchen is here ready to be installed and hubby would not be happy if I said I didn't like it, so please don't put me off even more.

What I can't decide on is if to go for a matching oak upstand and then a glass splashback behind the hob or no upstand and just glass splashback across the whole of the walls, from the worktop to under the wall unit. (I'm thinking a deep red coloured splashback).

Are splashbacks the 'in' thing - I've been told to avoid stainless steel splashbacks because of smears etc and I don't wanna go for tiles as that's what I've always had.

Anyone got splashbacks or any other ideas they can recommend? Also how important is it to have a splashback above the sink, would an upstand suffice here or is there danger of water damage without full coverage?
