Use paneling in the kitchen as a wall treatment called wainscoting. The paneling is applied to the lower section of the wall, approximately waist high. There is no set height for the wainscoting, but the idea of it is to protect a wall from damage from chairs. So think of the paneling covering the wall to the height of the back of your chairs. Wainscoting works best in traditional and country kitchens.
